Inspiration Comes When You Least Expect It [in the kitchen]

“They inspire you, they entertain you, and you end up learning a ton even when you don’t know it” – Nicholas SparksThroughout my time at the Blue Mountains International Hotel Management School, I have built numerous relationships with all the staff at the school.

It was the lecturers that strengthened my position at the School. Flashing back to my very first day, a big culture shock, it was the staff in the kitchen that gave me the greatest encouragement.

Don’t believe what you hear about angry chefs in the kitchen. They can be great! I worked with all the chefs; Chef Neale, Chef Richard, Chef Jenna, Chef Debbie and Chef Muzz, who all supported me throughout. If I had problems I needed help with it was the chefs who turned the situation around.

It surprises me that I found so much support in the kitchen– personally and professionally.

Our days begin every morning at the school restaurant, Ploughmans, the chefs behave like quasi parents, making us breakfast, ensuring we eat the right combination of things.

Practical kitchen operations such cooking and serving might be easy enough for some. But for me cooking  . . . serving– forget it! I have never even been into the kitchen of my own house. I was not at all comfortable.

I have never been much of a cook . . . well I just haven’t needed to . . . I started off in the kitchen not knowing how to cut open a pumpkin and with their encouragement, I am proud to say, I can now to cut one open prepare it and even make it into a meal, not just for one person, but for a whole school!

The Chefs showed me the safest and quickest ways in doing everything. I learnt all the basics about being a chef and the practical operations of the kitchen. I learnt a different side of life that I am now able to utilize. I appreciate the preparation involved for back-of-house staff in the hospitality industry need but also the people who do these things for me at home.

So whilst I am saying how great the chefs are at the Blue Mountains International Hospitality Management School I would like to say THANK YOU to all my teachers, Thank you for everything! You are all been the most beautiful set of people I have met in my life.

I miss you all very much – whether its walking pass your offices stopping, talking, fighting with you in class– thank you for allowing me to always be myself!
